My experience with EZ-Track was quite positive. I ran a layout for one year with their (at the time) wide turnouts. These turnouts would have had a substitution radius near 40". They worked fine on DCC. They had remote control and manual. For manual, there is a little black nub in a slot on the side that you slide back and forth as stated above.
The principle failing of these turnouts, in my view, is that the points rail hinges are awful, and the points themselves will rock as a result. This may have the effect of making some marginally gauged items derail. Also, the very point is often too thick and offers a pickable tip for some of your stock that is gauged a bit wide. You will have to accept that these are essentially entry level turnouts. Personally, I think they cost too much for what they offer. You'd be way better off purchasing the customline or streamline varieties and shimming them up to meet the rest of the EZ-Track properly.
If you elect to run all EZ-Track, then do yourself a favour and tune the points. Take a small file, place a thin piece of wood between the point tip and its stock rail, and file the point to a very sharp tip. Tweak the bow of the rail so that the tip lies flush and affords the oncoming flanges a nice transition into the diverging route. Check the gauge everywhere along the turnout.
As I said, I enjoyed my layout once everything worked reliably. I operated turnouts both ways, and never had a machine fail to switch.
