Butterflies have a symbolic meaning in Japanese culture. They signify the cycle of life, death, and renewal.
The flashback shows a Mantis disrupting this cycle by chewing on it. The Mantis can be interpreted in another way. It is a tiny being with blades for arms capable of short flight. They are pretty robust and can kill prey that are significantly larger than them in size. This was a way of showing that Mikasa had taken on the qualities of something that proved to her that the world was cruel.
Mikasa was destined to kill Eren from the start of Attack on Titan
One of the most controversial characters in Attack on Titan is Mikasa Ackermann. Several viewers praised her for her strength and dedication, a rarity among female characters in Shonen.
